Quinoa Salad
A refreshing salad made with quinoa, crisp veggies, and a zesty lemon vinaigrette. Perfect for a light lunch or a side dish.
Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Bring the quinoa and water to a boil. Reduce heat, cover, and simmer for 15 minutes or until the water is absorbed. Fluff with a fork and let cool.
- In a large bowl, combine the cooked quinoa, cucumber, bell pepper, red onion, and parsley.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to coat evenly.
- Chill for at least 30 minutes before serving for best flavor.
